After work, I dashed to an eyelash appointment to have them refilled. Ugh…why couldn’t I have beautiful long, full lashes that my kids have. Upkeep at 40 is so much more work than it was when I was 20, that’s a post for another day. Before making dinner I was craving dessert so I prepped a quick banana chia seed pudding. ‘Chia’ is the ancient Mayan word for strength and is a superfood full of omega 3’s, protein, fiber and antioxidants.
Since I was out of almond milk, I made a vanilla chai as the liquid for this recipe.
Ingredients
- - 2 tbsps chia seeds
- - 1 cup almond milk or vanilla chai tea
- - 1 tsp cinnamon
- - 1 tsp maple syrup
- - 1 smashed banana
Instructions
- VANILLA CHAI VERSION
- If you are using vanilla chai tea, steep the tea for 3 minutes.
- While the tea is steeping, smash the banana. After the tea finishes steeping, remove the tea bag and add the remaining ingredients.
- Let the chia pudding sit for about 30 minutes. Enjoy it warm or chilled.
- ALMOND MILK VERSION
- Smash the banana, then add the remaining ingredients to a mason jar. Stir the chia seed pudding, then let it sit for 30 minutes. Enjoy it warm or chilled.
